A little about me: In 2024 I had to start making some radical lifestyle and food changes to my diet. I'd spent 6 months non-weight bearing after an ankle fusion surgery, and another 3 months of physical therapy learning to walk again.
The inactivity, cooking (I could stand to cook for short periods), and eating made me FAT.
I discovered though, that beyond being cheerful and chubby, that my blood glucose levels had me in the "prediabetic" category, and that diabetes actually runs in my family! Red Alarms went off, and I had a fire lit under my butt.
l've been giving some of my favorite recipes a healthy makeover by reducing carbs, sugar, and finding better-for-you alternatives. The good news I'm slimming up slowly, and my A1C blood glucose is also slowly lowering.
The days of exercise compensating for any of my bad eating habits are long gone for me though. The ankle fusion limits many activities. Lower activity seems to be the norm going forward. I love the walking treadmill in my office, but 30 minutes max is my best right now. Sad, but also victorious, as last year I couldn't even walk at all.
My goal here at Easy Diabetic Cooking is to provide others in a similar situation a plan of attack. Flavorful, low-carb recipes and meal plans, with healthy swaps where it fits (because let's be real, "healthy" is personal). To fight the feeling of "nothing to eat," which can lead to frustration and unhealthy choices.
I know what it's like to cook for one person also, as my kids are all grown and scattered. So, I'm working on recipes that max out at 4 serving (because you can freeze half and not get SICK OF THE SAME THING all week). I've reworked my favorite SmellsLikeDelish.com recipes (my first food blog) whenever possible also.
